INTRO

A recipe has no soul. You, as the chef, must bring soul to the recipe. Food is one of life’s greatest pleasures. Paired with the idyllic setting of the Mexican Caribbean Sea, food becomes something unforgettable. Together with Papaya Playa Project’s Chef Jacob Herrera, we will host an exclusive and unforgettable cooking class, equipping you with the tools and techniques you need to create a delicious and memorable Mexican meal, all while educating you on the various, ancestral processes that go into traditional Mexican cuisine.

THE COURSE

The course begins with an introduction with Chef Jacob Herrera, followed by an immersive journey through Papaya Playa Project’s Art Walk accompanied by a delicious and refreshing Prana Juice from our natural juice bar. The course begins with a workshop on corn nixtamalization, cacao, and honey, as well as an introduction to the various foundations of Mexican cuisine: chile, beans, and corn.

We’ll then prepare a number of traditional salsas with which to taste alongside our nixtamalized tortillas. After, we’ll prepare sikil pak together, an ancestral Mayan dip made with pumpkin seeds. We’ll then taste a number of vegetables grown in a milpa, a traditional Mesoamerican crop-growing system.

You’ll finish your cooking experience with a number of recipes and a sample kit to take home and share with your friends and family.
